Christine Lakin’s Lentil Feta and Bruschetta Dip

My dear friend and Hostess with the Mostess, Christine Lakin, had a little shindig over the weekend and I showed up HUNGRY!

She had a delicious variety of appetizers on her kitchen counter and I spotted the lentil dip right away.

“Ooooh girl! What is this?!” I asked.

“It’s the BEST dip, you won’t believe how good it is!”  She said.

Well…I had my first taste of this magical dip, and that’s all I remember.

I think I might have eaten it all…sorry bout that Lakin.

She told me it takes a minute to put together, and it’s a winner every time.  

And then, she graciously gave me the recipe.  Thank you sister!!

Um…If you think I didn’t make it the next day, you’d be wrong. 

It’s three ingredients y’all!   THREE!

Lentils, Feta Cheese, and Bruschetta.  

Oh, and whatever crackers you want to serve it with.   Ok, so FOUR.   That’s so easy right?!

She bought everything from Trader Joe’s.

These lentils are pre-cooked and ready to go.

If you don’t live near a Trader Joe’s, no biggie.

Buy a can of lentil beans or buy them in bulk, and cook accordingly.

I like the green and red lentils, but it’s your call!

 

 

bruschetta

I like Trader Joe’s version because the ingredients are:

Roma tomatoes, canola/extra virgin olive oil blend, balsamic vinegar, fresh basil, salt, garlic, sugar, black pepper.

Get whatever bruschetta you love.

 And now for the cheese!   The recipe calls for one small container of Feta cheese. 

For all you vegans and dairy free peeps out there, I have a killer Vegan Feta Recipe from Maplespice.com below:  

Baked Almond Feta

  • Ground almonds (about 1 1/2 cups)
  • Lemon juice (1/4 cup)
  • 1/2 cup water (4 fl oz)
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 1/4 tsp salt

Now, just mix them all together!

  • about 2 cups cooked lentils
  • about 2 cups of bruschetta
  • about 1 cup of feta
  • add a little basil if you like!

Of course, this dip should be made to YOUR taste buds, so YOU make the call on portion sizes.

And also, the cracker choice is on you.  I love rice crackers or gluten free crackers: less bloat.

You can also use veggie slices.
